Dublin Bay Prawn Cocktail

Ingredients

  • 2kg finely shredded iceberg lettuce.
  • 4 spring onions, finely sliced.
  • 1 ripe avocado, chopped.
  • Squeeze of lime.
  • Pinch of cayenne pepper.
  • Cocktail sauce, to taste.
  • 350g succulent prawns.

Method

  1. Blend lettuce, spring onions, avocado, salt, pepper, cayenne and lime for a refreshing base.
  2. Gently stir prawns in cocktail sauce, reserving some for topping.
  3. Layer salad mix and prawn blend in ice cream sundae-style glasses or a cup.
  4. Crown with cocktail sauce and juicy prawns.
