Dublin Bay Prawn Cocktail
Preparation Time: 25-30 minutes
Ingredients
- 2kg finely shredded iceberg lettuce.
- 4 spring onions, finely sliced.
- 1 ripe avocado, chopped.
- Squeeze of lime.
- Pinch of cayenne pepper.
- Cocktail sauce, to taste.
- 350g succulent prawns.
Method
- Blend lettuce, spring onions, avocado, salt, pepper, cayenne and lime for a refreshing base.
- Gently stir prawns in cocktail sauce, reserving some for topping.
- Layer salad mix and prawn blend in ice cream sundae-style glasses or a cup.
- Crown with cocktail sauce and juicy prawns.
