Classic Irish Lobster Roll
Preparation Time: 15 minutes
Ingredients
- 500g cooked Shellfish Ireland lobster meat, roughly chopped.
- 2 tbsp good-quality mayonnaise.
- 1 tsp Dijon mustard.
- Juice of ½ lemon.
- 2 spring onions, finely sliced.
- Sea salt and freshly ground black pepper.
- 4 brioche or soft bread rolls.
- 1 tbsp butter, melted.
- Fresh chives, finely chopped, to garnish.
Method
- Prepare the lobster
If cooking your own lobster, boil in salted water according to size, then remove the meat from the claws and tail and chop into bite-sized pieces. - Make the filling
In a bowl, combine the mayonnaise, Dijon mustard and lemon juice. Add the lobster meat and spring onions. Gently mix until everything is lightly coated. Season with sea salt and black pepper. - Toast the rolls
Brush the inside of the rolls with melted butter and toast in a hot pan or under a grill until lightly golden. - Assemble
Fill each toasted roll generously with the lobster mixture. Sprinkle with chopped chives and serve immediately - To Serve
Serve with a crisp green salad, hand-cut chips, or simply alongside a wedge of lemon. For an extra touch of luxury, add a little lemon aioli on top before serving. Use just enough dressing to bind the lobster together—the lobster should remain the star of the roll.
