Breaded Scampi
Preparation Time: 15–20 minutes
Ingredients
- 20-25 prawns cut in half.
- 1 cup plain flour/ all-purpose flour.
- 2 eggs.
- 2 cups breadcrumbs.
- 1 tsp garlic powder, salt, black pepper and paprika.
- Vegetable oil for frying.
- Lettuce and lemon wedges.
Method
- Heat enough oil in a deep saucepan to cover the scampi.
- Place the saucepan over high heat.
- In a small bowl, beat the eggs with a pinch of salt.
- Mix the plain flour and black pepper in another small bowl.
- In a third bowl, put the breadcrumbs for easier coating.
- Dip the scampi in egg, flour mixture and breadcrumbs, shaking off excess each time.
- Once coated, fry them in the hot oil until they turn golden brown, about 1 to 2 minutes. Keep an eye on them.
- Use a slotted spoon to move them to a plate lined with two pieces of kitchen paper to drain excess oil.
- Serve immediately with your choice of side, like salad and chips. Lemon juice and cocktail sauce are great for dipping, especially as a starter.
