Classic Irish Lobster Roll

Preparation Time: 15 minutes

Ingredients

  • 500g cooked Shellfish Ireland lobster meat, roughly chopped.
  • 2 tbsp good-quality mayonnaise.
  • 1 tsp Dijon mustard.
  • Juice of ½ lemon.
  • 2 spring onions, finely sliced.
  • Sea salt and freshly ground black pepper.
  • 4 brioche or soft bread rolls.
  • 1 tbsp butter, melted.
  • Fresh chives, finely chopped, to garnish.

Method

  1. Prepare the lobster
    If cooking your own lobster, boil in salted water according to size, then remove the meat from the claws and tail and chop into bite-sized pieces.
  2. Make the filling
    In a bowl, combine the mayonnaise, Dijon mustard and lemon juice. Add the lobster meat and spring onions. Gently mix until everything is lightly coated. Season with sea salt and black pepper.
  3. Toast the rolls
    Brush the inside of the rolls with melted butter and toast in a hot pan or under a grill until lightly golden.
  4. Assemble
    Fill each toasted roll generously with the lobster mixture. Sprinkle with chopped chives and serve immediately
  5. To Serve
    Serve with a crisp green salad, hand-cut chips, or simply alongside a wedge of lemon. For an extra touch of luxury, add a little lemon aioli on top before serving. Use just enough dressing to bind the lobster together—the lobster should remain the star of the roll.
